I opened the launcher to find that I had been logged out and I was unable to log back in. I managed to log into my account online and then reset my password. When I logged in I found that all of my installations/profiles had been deleted.
I am not sure how to reproduce this or how it occurred in my instance.

I have had this happen to me a few times since I submitted this report and I am aware of the same thing happening to other people as well. However, I still have no idea about how it can be reproduced.
I can confirm the issue, it happenned to me three times by the time I m writting this.
I ve managed to reproduce it by two main methods, first one is while updating your launcher from an old version ti latest one, skipping one or more versions of the launcher.
And the scond way seems to hapen when you dont start the launcher in a long time. In both cases, launcher stop recognising my information, deleted my profiles, and deleted my skins.
I just got this issue and have no clue how it happened. I'm hoping that customer support can help me, but if not I don't know what to do.

Could you answer few questions regarding this issue, it will help with the investigation:
Have you tried to install Launcher from the minecraft.net website/MS store?
Are you logged in in both Xbox app, MS store, and Launcher with the same MS account?
Have you tried signing out of all your Windows Apps, and the signing in again?
Is your Windows and associated apps (Xbox app, MS store) up-to-date?
Have you tried to re-registering MS store as written here?
Do you have enough free space on your disc drive?
Do you use VPN or any of the incompatible software on machine you try to log-in?
Could you provide us with more in-depth repro steps?

I have not had this issue happen since my previous comment on 15th November 2019, however, it seems other people have had the issue happen to them since. The launcher I am using is the one from minecraft.net, not the Microsoft Store version - this issue predates the MS store version.
My storage drive has plenty of space.
I do not use a VPN or any of the incompatible software mentioned.
I have no clue how to give reproduction steps, you can see both me and other people have said it seems to the user that it happens under no special circumstances.
I cannot say if any of the other points you have mentioned make a difference to the issue as I am unable to reliably reproduce it.
This has just happened to me again, however, I am still unsure about what is causing it.
