The launcher has this issue. Everything is very small, I cannot read the text. I tried reseting the app to it’s defaults, I even tried unistalling and reinstalling the launcher. The result was the same

Can you please look inside System>Display and add screenshot of scaling and display resolution.
Please also see Accessibility > text size and revert to the smallest option.
Also try this method:
Please make sure that your Launcher is closed.
Go to .minecraft and delete webcache2 folder.
The Launcher should not be storing the zoom state at all, but if this is the case then it might be stored in webcache2 folder.
Please note that this does not affect game functionality in any way.
Please also try installing Legacy Launcher from https://www.minecraft.net/en-us/download
