Every time I try to launch any version of Minecraft, it launched 1.21.11 instead (currently the latest release). I tried uninstalling and reinstalling the launcher, it still gives me this issue. (Specifically, I tried launching 1.21.9, and 1.18.1, and still gave me 1.21.11, which always gives me the crash report for missing memory)

If you are on Windows, you can use Windows+Alt+R to open a built-in app for recording game footage.
If you are on Mac (Mojave or later), you can use Shift+Command+5 to open a built-in app for recording your screen.
In case you don't have a program to record videos, we recommend using the free recording software OBS.
In case the resulting video file is too large to be uploaded to the bug tracker directly, please upload it elsewhere (e.g. as unlisted video on YouTube) and link to it here.

You need to create a new installation, for some reason changing the version for the “Latest release” installation doesn’t actually change the version that launches even though the launcher displays the version you switched to.
