I have noticed that pumpkins grow to pumpkin bearing height, but never grow them. It may be the same with melons, but I do not know.

Tristan, have you been leaving space around the pumpkin plants? The plant itself does not grow into a pumpkin, rather a pumpkin appears on an empty grass/dirt block immediately beside the plant. See http://minecraft.gamepedia.com/Tutorials/Pumpkin_and_melon_farming
