Using shears on pumpkins no longer makes them into Jack o’lanterns. It just harvests them as regular pumpkins. Crouch/Stealth has no affect on this issue
Using shears on a bee hive breaks the hive and does not give any honeycomb. Crouch/stealth does not give any additional options for harvesting without losing the whole hive. Thi happens even if a campfire is present.
Possibly related, I can’t use a glass jar on a hive to get honey. I tried everything I could think of to get it to work but all that happened was I accidentally broke the hive when trying various things like crouch/ stealth to trigger the harvest.

After further experimentation, I figured out that both hives and pumpkins are working on my apple iPad mini.
To make a Jack o’lantern: equip the shears and tap once on the face (side) of the pumpkin with them. Tapping on the top appears to have no effect.
To harvest honeycomb: equip shears and tap once on the side of the hive. I’m not 100% sure that this is what worked because I only had one hive to try it on.
You're holding the wrong button (if you are on windows 10). You need to press right click just once shortly. If you are on a mobile, tap on the beenest/beehive. It's just the same as you would place a block, but with shears or a bottle in your hand, whatever device you're on.
