Get "outdated server" on Nintendo Switch after upgrade to 1.16.100

Update on this issue:

Bedrock: The Minecraft 1.16.100 update has gone out early on Nintendo Switch, causing issues with cross-platform multiplayer. The update will release on all platforms Tuesday, Nov 17 at 9am Pacific (5pm GMT). -MG

It said it had to update the version but instead it downgraded me so I am not longer in the latest version. How did that happen?

The realms/server is outdated, not your game

1.16.100 is the correct new version, you did not downgrade to 1.16.10 which is a different version altogether

The realm is in 1.16.5 where as my switch has updated itself to 1.16.1 just like OP has said

The two zero's in 1.16.100 matter
1.16.1 is different from 1.16.10 is different from 1.16.100
It is the same as you upgraded from Bedrock 1.9 to Bedrock 1.10, they did not "downgrade" it to version 1.1

You can't play online on the switch with 1.16.100 you have to be at least 1.16.14 in order for it to work

I still have the problem of not being able to enter my realm although they already said that it is possible to enter. the problem persists

I am also unable to use my Realm 

My switch says there's no update for minecraft currently...

This should be fixed now.
