I have similar issues. I’ve been killed several times by an invisible mob. I recently found a motionless zombie and tried to kill it. No effect. I tried to shoot it but the arrows passed through it. Then I was attacked and killed while trying to hit the invisible mob.

My theory is that the entity became detached from the skin somehow.

I have seen a similar bug with one villager farmer during their gathering time. He will stand in one spot, frozen, no collisions (can't be pushed or hit) and cannot be interacted with for trading. He was still able to breed with an non-bugged villager who was around 20-30 blocks away (heart animation from both and a baby produced).
