My experience: I had a trading hall with villagers trapped in separate fences. After updating, one of my villagers was stuck in the floor. I freed him and he immediately got stuck in one spot. He laid on the floor and wouldn't move no matter what I did (water, hitting, pushing). Also, his trade (Mending I) was changed to Fire Aspect I. Two of my other villagers have swapped trades as well.
tldr: villagers' trades have changed after the update / villager got stuck in place

Please put only one bug report in each ticket. It is very difficult to keep track of bugs when they are not in their own tickets.
The two issues you describe are now fixed; they were tracked at MCPE-62080 and MCPE-101202. The trade changing bug was fixed in the update you experienced it. Given the nature of that bug, it's likely that you had a couple of villagers who had previously linked to workstations without updating their professions, and the update reset them to the correct professions. If it happens with new villagers then please make a new report.
