After update 1.16.100 mobs (including villagers) are turning invisible. i keep getting attacked by invisible mobs ( i am on normal mode) . and villages seem to turn invisible when they sleep! happens randomly it seems but especially at night. also, one of the villagers i had in my trading hall disappear, and i accidentally bumped into a sleeping villager in my breeder and he slid all across the room PENETRATED WALLS ... while still sleeping) and ended up like 20 blocks away and vanished!
