Huge amount of piglins spawning all over my nether, even when there is not a bastion anywhere close. Same for peaceful and normal/hard.

Thank you for the screenshot. It shows a normal amount of mobs. Piglins spawn in nether wastes (the old nether biome) and crimson forests. If the world is set on peaceful difficulty, then you will get more of them in nether wastes than usual because they will not be competing for mob cap space with zombified piglins and ghasts.
