4 different times, I have had invisible mobs spawn that are impossible to kill. With the witch, skeleton and one zombie the on resolution was to save and quit, but the most recent one was a zombie I couldn't see/hear and a creeper that was invisible until exploding.

Yup - Mojang is aware of this issue, and has a fix in Beta. This is a duplicate of MCPE-71243.
