The recentv1.16.200 version of Mincraft for Windows 10 came with some VR UI changes that have made some elements of the VR experience more difficult and possibly unplayable.
Detailed Explanation:
The UI does not overlay the 3D world and it now intersects with object in the environment. This causes menus and UI elements to be obfuscated by world objects.
In many cases this makes the menu object useless. I've had to go outside my house to pull up my main menu. Crafting stations can not sit next to walls or the the menu is inside the wall.
I saw a bug fix for VR UI that described how the perspective changed to a 360 video like view when going into menus. I believe that was on purpose to ensure the menus overlayed the world.
VR UI Scale, UI Safe Area, or any other settings around UI seem to help (some make it worse)

MCPE-109860 is for PSVR, this same issue is happening on Windows 10 VR as well. Need to confirm issue is being tracked across platforms.
did not see your bug report when i posted mine, im having the same issue, i thought the bugs before were game breaking..i was wrong, not being able to go into inventories as they are completely covered is a lot worse
