Stone mason will not change their trades.

On my realm, me and a few friends live in a jungle, so we had to tote some villagers a couple hundred blocks and create a village of our own. I am trying to get a stone mason that will buy quartz. The only problem is, he will not change his trade. If I change his profession completely, his trades in the new profession will change if I break and replace the new job block. But when I break his new job block and place down a stonecutter, his trades are the same as before, and still will not change. I don’t know if this only applies to jungle biomes or if it’s the realm that’s causing the issue, but all I know is that it’s quite annoying.
