Whenever I open inventory, the inventory shows only 1 item randomly and then the full inventory opens

Does MCPE-104240 describe your issue? If not, please attach a video showing the issue.
Cleaning up old tickets: This ticket had been set to 'Awaiting Response', but has not received a response from the reporter (~3 months+) so is being closed as Incomplete.
