This is a simple visual glitch where a crossbow will appear on a player's chest in multiplayer. If another player is holding a crossbow, it appears on their chest. It is only visible by other players in a multiplayer game, not the one holding the crossbow. This is true for both loaded, unloaded, enchanted, and unenchanted crossbows.
