I went to put down normal stone brick stairs and they turned out as cracked stone brick stairs. A screenshot is included.
EDIT• It depends on your orientation whether it gives you mossy stone brick stairs, cracked stone brick stairs and stone brick stairs

I can confirm this bug (yes i am iOS) for the following staircases:
Stone Brick Stairs: Transform into mossy stone brick stair and the cracked stone brick stair
Quartz Stair (which btw has no proper name): Transforms into chiseled quartz stair and pillared quartz stair.
Sandstone stair: Transforms into chiseled sandstone stairs and smooth sandstone stairs
