When I went out of my boat it was nowhere to be found. It didn’t even drop or break it just wasn’t there. And then I when I left and join it was back where it was.

This kept happening to me in 1.17.x and now also does in 1.18.0.
World is on a BDS on Linux.
For me, I have to unload the chunk where the I left the boat and reload it for the boat to reappear (which is what OP did through relogging into the world).
I have yet to test whether this is depended on the platform I connect from, will update this bug when I come around to it.

This is happening to me on a local world, ipad, 1.18 bedrock. If I run far enough away to unload the chunk and come back the boat is there, also if I relog.
Edit : this happens every time I get out of the boat.

This has happened to us while playing Nintendo Switch, local world 1.18 bedrock. When a player gets out of a boat it vanishes and can't be seen. Logging out and coming back usually makes it reappear.
This has happened to both empty boats and ones containing villagers.
We've also found when playing multiplayer while the person who got out of the boat suddenly can't see it or interact with it, the boat remains visible to the other players. If another play clicks on the boat it will "reappear" to the person who got out earlier and they can once again use it or pick it up.
