I set myself the earth skin(I got it after signing up for the mc earth beta few years back)and while I can use it and set it, after I close the game and then open it again while offline(to play singleplayer)the skin is reset to steve/alex. This is annoying, especially since it also happens to paid skin packs I believe. I also cannnot change the skin back since it does not show under owned skin packs. The only thing I can do is close the game, connect to the internet, relaunch it and now the skin will show up in owned where I can set it again. Especially annoying on nintendo and mobile!

Can confirm that this happens on my Nintendo Switch. I either have to wait upwards of 30 seconds or restart my game to correctly load in my skin. Sometimes, it still refuses to do it.
This seems to happen regardless of how I dress my character.
