Have not been able to replicate.
After breaking workstations Villagers still keep professions and trades, Unable to give Profession less Villagers new Professions.

Is this still an issue in the latest version (1.18)? If so, can you please add it to the affected versions (or mention it if you are not the reporter).

The wiki say this "Once a player trades with a villager, the villager keeps its profession forever and subsequently locks in the offered trades."
So if you did that the only thing you can do is look for other villager :/ check the wiki for more information Minecraft Official Wiki
