The wiki say this "Once a player trades with a villager, the villager keeps its profession forever and subsequently locks in the offered trades."
So if you did that the only thing you can do is look for other villager :/ check the wiki for more information Minecraft Official Wiki
Maybe is an issue with elytra and swimming, the player hitbox doesnt update and you can pass 1 block spaces. This can relate to MCPE-109925
F3 + T or S are Java Edition Exclusive feature. Try to unistall and download the game again Make a backup of your worlds before do that!
Make sure theres not any composter close and i think (not really sure) you need a bed and a workstation then villager will change proffesion

@Creation, Some cave entrances will be flooded, in Bedrock most of the cave between y=63 and y=30 have this issue, this bug is already fixed in Java Edition.
This seems like a feature request, the best place for this is the feedback site
Most of the cave are flooded, Mojang know about this issue and was fixed in Java Edition so eventually will come to Bedrock
