After loosing all my villagers and animals ( ALL OF THEM) I reported it and after a very long time the issue was resolved, today I loaded my game and guess what I lost all my cows and chickens from my farms, this is the second time since the ....fix... resolved status its obviously not fixed, having to repopulate the farms is very demoralising especially after its been ...fixed

I had this issue a lot in the past and it was very frustrating. So I did some research and found out that one big reason mobs despawn is due to unloading and loading chunks. When a mob crosses a chunk border while you're unloading or loading it, the game doesn't know where it is so it just gets deleted. I fixed this by downloading this texture pack. https://foxynotail.com/resource-packs/markers/
It shows you where chunk borders are and a ton of other useful things. You can use it to block off chunk borders so mobs can't cross any. I have used this pack for about 2 months now and haven't had any issues with mob despawning since.
