Steps to reproduce:
1. Look for a villager
2. Look for any block that gives profession to the villager (Lectern, Blast Furnace, Smoker, Brewing Stand, etc...)
3. Place one of the blocks that give profession next to or near the villager
Observed results:
It takes a long time for the villager to get the profession or sometimes he doesn't get a profession. He continues with the profession he spawned.
Expected results:

Villagers in Bedrock Edition can only link to a workstation when they are in a village defined by at least one bed. When they are in a village they link to the workstation within a few seconds, just like in Java. Based on your summary I am resolving this report as Cannot Reproduce.
