They literally do not exist in the touch option in settings.
Steps to reproduce (it is required for some reason):
1: Open Minecraft
2: Open a world
3: Go to settings
4: Look for new controls.
Observed:
It does not exist.

Yeah. There's a problem with the new mobile controls for me too. So I updated Minecraft, and then when it got done, it said I could update Minecraft again, but when I clicked on Minecraft, it let me press Play, so I was confused on what to do. I feel like it maybe has something to do with being a beta tester, because when I chose Update instead, it brought me to a newer version and also a beta version and then it did have the controls but it's a beta so it's not letting me play on servers or play on worlds without the risk of it being deleted.

However, this issue has been closed as Working as Intended.
Unfortunately, the updated touch controls were not included in the 1.19.0 full release, and are still only available to Minecraft Beta / Preview players. (The changelog has since been updated to reflect this.)
