In my current world, I am watching animals despawn right in front of me. Its not a save issue, as I am not opening and closing the game for it to happen. Animals are literally just disappearing right in front of me as I play. This, obviously, makes farms impossible. I watched it happen with both cows and horses.

How far away were the mobs when they disappeared? On the default setting of Simulation Distance 4, most naturally-spawned mobs will despawn when they are 44 blocks from the player.
You might also attach a video showing the issue.
