When playing cross-platform games between PC (W11 Home V. 21H2), and Nintendo Switch, we have seen severe lag on all local games, anytime the Switch user interacts with a dialog, such as typing in the chat, writing text on a sign or book, etc. We have seen this issue since at least 1.17, and maybe earlier, and it is still an issue today, in 1.19.30. This bug does not seem to affect realm gameplay.
This seems to happen regardless if the switch player is the game host, or the PC player.
We have tried deleting worlds, resource packs, reinstalling Minecraft on both the PC and Switch, reducing simulation distance, render distance, and many other things, and nothing seems to help in the least.
Searching for this issue, it appears that any similar reports were marked resolved, and were for much earlier versions of Minecraft.

Came to report the same, and also noticed previous reports going back to 2020 and 2021 were closed due to inactivity. I personally cannot speak to years ago, but this is most certainly still an issue in 1.19.51. Anytime Nintendo Switch (hosting in our case) interacts with a typing dialogue in-game, my Win10 PC game lags terribly. I can move fine and my animations are fine, but entities around me do not respond. This includes mobs (especially hostile) frozen in place, inability to pick up floating items, blocks don't break, etc. To the first point, I've been killed several times when the lag ends and several things happen in a few ticks, including getting attacked. At least we caught on that it's the chat so the Nintendo Switch user avoids typing unless everyone else is in a safe spot. The lag ends the moment the Nintendo Switch user stops typing, so there's no question what is causing the lag; very easy to reproduce.
