I have a 2x2 infinite water source and I put sugarcane all around the water sources. I vote sometimes I need a bucket of water, so I'll scoop up a water bucket from 1 of the source blocks and every time I do, the 2 adjacent sugarcane will break. I'm not used to this because it doesn't happen on Java, only Bedrock. It's very annoying to replace the sugarcane every time.

No, the tick speed is the original one (1). I don't use cheats in the world I'm referring to in this case. I unfortunately cannot attach my world either. It is not limited to any world though, just any world you make will have the same issue.
I can't reproduce the issue in 1.19.60. Is this still a problem for you? If so, could you please add the steps to reproduce and video.

However, this issue has been closed as Working as Intended.
Sugar Cane immediately breaking upon removing water is expected if RandomTickSpeed is set to a high value.
