Sometimes when playing on Bedrock, I head into the crafting table or maybe a chest and move some items around, this glitch happens most when I craft a lot of items and shift click the crafted item into my inventory, it seems to bug the game and you then cannot interact with any item within the inventory until you re-open it or wait a while.
