Enchanting Table names are different for Java and Bedrock

The "Enchanting Table" is called "Enchanting Table" in Java following the pattern "Crafting Table", "Smithing Table", "Fletching Table". Even the wiki calls it "Enchanting Table" but in the Bedrock Version of the game, the block is named "Enchantment Table"

As pointed out by Pheonix SC Youtube

The definition of Enchanting often has the connotation of : powerfully pleasing, appealing, or delightful
Whereas the definition of Enchantment often has the connotation of : something that enchants, act of enchanting
Both with dictionary.com and Meriam webster

I would argue that enchantment table is what it should be called.

You're talking about "enchanting" as an adjective but its also a verb similar to crafting (as in crafting table) or smithing (as in smithing table).

Its also an issue of consistency and pattern, isn't it?
