I had named a sheep with a nametag, fenced it and tethered it. today on 10/18/23 I found it missing from its pen. I assume it despawned since I do not interact with it.

It looks like you might be near a forest biome where wolves can spawn. Is it possible you had the area loaded long enough for a wolf to spawn inside the pen, kill the sheep, and then despawn, and for the sheep's wool and mutton to despawn (5 minutes)?

I thought a wolf may have gotten in too but my other sheep were not on my farm this morning.

Can confirm issue occurred in my world in BDS on version 1.20.41. Old flock of sheep disappeared after building a barn extension which allowed outdoor pens of 18 × 18. Thinking the pens were too large allowing for despawn, bred 2nd flock of 16 and named-tagged them. This flock too has now disappeared. The two llamas and camel remain.
