I got an xbox for christmas. Today, I keep seeing that some of my microsoft account friends are on Minecraft. I try to join them but it says they're not in a world. One of my Nintendo Switch friends was one of the friends of mine on Minecraft so I started up the game on my switch to see that it said my friend was in a world but it says they were not signed into their microsoft account. This doesn't make sense because if they weren't signed into it, my xbox wouldn't say they are currently playing the game.

However, this issue is Invalid.
In order to join your friends in a world, they have to be playing in a "shared" world, and you have to be "invited" by the world host (which might be a different person). Your friend might be playing in a local single-player world, which would still show up as them "playing Minecraft".
I would suggest first contacting the friend you want to join and ask for an invitation to a shared world. If you are unable to join them after that, please contact Community Support for assistance and refer to this report by providing a link.
