I use Android, so I don't have this bug. However, my friend uses iOS, so he is having trouble with this bug. (※I'll vote for this report just in case. / Translated)
Start the app as usual (it will turn pink) → (while in the background) close the app → press the app icon again to start it → it will return to normal. (※Friend's iOS: iPhone13 PRO MAX)

For me though, I can definitely work around the problem by changing the Display Zoom to Default. Please note that this is quite annoying as the iPad requires a "soft" reboot when switching.
Does minimizing the Minecraft app (How to switch apps on your iPhone, iPad, or iPod touch) fix the issue?
I was seeing it on M4 iPad Pro using iOS 17.6 but updating iPad to iOS 18 the issue isn't there. Minecraft v1.21.23

Are you using any resource packs? If so, does disabling them fix the issue?
