Since the previous update and with 1.21.21 still, Minecraft will not render graphics properly when Display Zoom is set to More Space for the iPad.

Did MCPE-185373 describe your problem?
Ups, didn't find that one while searching... Might be related or even the same issue. For me though, I can definitely work around the problem by changing the Display Zoom to Default. Please note that this is quite annoying as the iPad requires a "soft" reboot when switching.
