eI've been playing Minecraft for a long time and in these latest updates I can't get the achievements even though I do what's necessary to do them.

It might be because you have enabled cheats in the past on that world. Try making a new world without cheats enabled.
Please try the workaround in the description of MCPE-115808 and let me know if that fixes the issue or not.
