Mooshroom's mushrooms turn red when hitting an entity

I’ve also noticed the mushrooms randomly going black if you hit an entity or even just walk by

Possibly related - The mushrooms on the backs of red mooshrooms often shine brightly in the dark, but not always, and they can flash on and off. This doesn’t seem to be related to collisions; it can happen when they are walking about on perfectly flat, featureless terrain. I am in a realm in which I have Vibrant Visuals turned on and a friend does not; we both see the glow-in-the-dark red mushrooms.
