Was attempting to get specific trades from villager and was placing and breaking their job block until they stuck with the same job not being able to trade or reset their job. Was able to find a small fix with placing their job block and a bed quickly together to reset trades but was having to place both together. After when trade was locked in and had ran out of stock, the villager has not been able to restock. No fixes or work arounds for it.

It looks like you are expecting the villager to link to the closest workstation. That is a Java Edition feature. In Bedrock Edition villagers are first assigned to a village defined by at least 1 bed, and then they are linked to workstations in an undefined order. You may want to refer to a Bedrock Edition trading hall tutorial for help with linking villagers to workstations.
We're tracking this issue in MCPE-45270, so this ticket is being resolved and linked as a duplicate.
