Converting worlds from legacy console edition to Bedrock Edition causes signs to lose any text

When converting a world from Minecraft: Xbox One Edition or Minecraft: Xbox 360 Edition, signs within worlds lose any text that was applied to them in the legacy edition. See the example in the images below.
