The game automatically sign the Microsoft Account back in each time the game restarts, even when the player signed out of the Microsoft Account themselves. For my experience, a data wipe to the game or even whole game reinstall is not possible to break the link either. However this issue may be specific to GDK builds.
Steps to reproduce:
With Minecraft open, click Sign in to sign in to Microsoft Account
Once signed in, go to Profile
Click the three dot
Click Sign out
Return to the title screen
Restart Minecraft
Expected result: The game should start as a signed out user.
Observed result: The game starts, but automatically signs user back in to Microsoft Account.
Note: Clip “game cannot start as a signed out user.mp4” starts at step 6.
Workaround: Sign out of the Microsoft Account from the Xbox App:
Open Xbox app while connected to the internet
Click the profile icon / gamertag
Click Sign out
Open Minecraft Preview
When the sign-in pop-up appears, press the close window button

@wreeper Thanks for the workaround, I did that but without rebooting the PC, the game still signs back in, and after rebooting, the previously linked account gets added back.
I did various workarounds before this, which includes:

Disconnecting the PC from the internet | Results in account to be unlinked in UWP version, but on GDK version, the game “signs” back on its own, even without the internet. |
Wiping the game save (data), including | Save’s wiped, yet still manages to sign-in without clicking “Sign in now”, unlike UWP versions which it would not. |
Reinstall the game without the save data | Save’s wiped, yet still manages to sign-in without clicking “Sign in now”. |
Setting the device account to local account | Already a local account, yet still signs in to Microsoft Account on Minecraft Preview. |
Letting a second device open the game, kicking the first’s connection | When Minecraft Preview is being opened on the first PC after performing the workaround, its DRM asks me to sign back in, blocking the game from opening. |
After tons of workaround, I managed to play the game without signing myself on:
Open Xbox app while connected to the internet
Click the profile icon / gamertag
Click Sign out
Open Minecraft Preview
When the DRM asks you to sign in, press the close window button
