@wreeper Thanks for the workaround, I did that but without rebooting the PC, the game still signs back in, and after rebooting, the previously linked account gets added back.
I did various workarounds before this, which includes:
Method | Result |
Disconnecting the PC from the internet | Results in account to be unlinked in UWP version, but on GDK version, the game “signs” back on its own, even without the internet. |
Wiping the game save (data), including | Save’s wiped, yet still manages to sign-in without clicking “Sign in now”, unlike UWP versions which it would not. |

Setting the device account to local account | Already a local account, yet still signs in to Microsoft Account on Minecraft Preview. |
Letting a second device open the game, kicking the first’s connection | When Minecraft Preview is being opened on the first PC after performing the workaround, its DRM asks me to sign back in, blocking the game from opening. |
After tons of workaround, I managed to play the game without signing myself on:
Open Xbox app while connected to the internet
Click the profile icon / gamertag
Click Sign out
Open Minecraft Preview
When the DRM asks you to sign in, press the close window button
Can confirm.
iOS:

Cannot reproduce (fixed) since 1.21.90.27 Preview for Preview versions, and still can’t reproduce in 1.21.110.25 Preview, because the “Return to Old UI” button (from step 4) is removed and so it’s not possible to return to old UI.

Also, no add-on was activated reproducing the issue.
This bug may affect the resource pack. I had sent the one below to Minecraft Help but they told me to post that to Feedback, and then they ghosted me in a separate support ticket (not fair gng).
Steps to reproduce on the resource pack:
With Minecraft open, click “Play”
Click “Create new world”
Click “Owned by me”, make sure you grabbed at least one Marketplace content
Click “Super Mario Mash-up”, since it defaults to have the resource pack activated
Click Multiplayer on the left bar
Turn off Multiplayer toggle
Try to turn the Multiplayer toggle back on
Expected result: It should not cause the pop-up to appear, even if so, it should not also disable Switch-specific multiplayer
Actual result: It causes the pop-up to appear, telling players to deactivate the resource pack (see "resource-pack-disallows-multiplayer.jpg", translated to “Content disallowed”; “You activated the Super Mario Mash-up Pack, [which] this is not allowed on cross-platform multiplayer.”, “Remove content and re-enable multiplayer”; “Back”), and it makes hosting the world only in Switch-specific multiplayer over Nintendo Switch Online impossible.
Workaround specific to that: Included from comments earlier if players prefer Nintendo Switch, otherwise for PC and mobile players who cannot access the Nintendo consoles (for cost, space, time, even availability and Nintendo's ethics), for the world and resource pack, they can also import the community ports of it.
The Super Mario Mash-up pack is updated again in 1.21.100 (https://feedback.minecraft.net/hc/en-us/articles/38581287884557-Minecraft-1-21-100-Bedrock and https://www.minecraft.net/article/minecraft-1-21-100-bedrock-changelog ). from the resource pack in the Nintendo Switch, Compared to 1.0.33 in 1.21.50-1.21.94, the version is now 1.1.3 in 1.21.100, which added retextures until Spring to Life update.
Seems fixed in 1.21.94
The image you sent is actually mine, and yes, it affects the Nintendo Switch and iOS from the screenshots, and it cannot be worked around using the Super Mario Mash-up.
If you’re on mobile or PC, check the report you’re (intentionally) duplicating from for a workaround resource pack, also from me by the way.

Did you have global resource activated before discovering this issue? If so, it could be solved by deactivating one.
Can confirm on my Nintendo Switch, this can also be reproduced if the console does not have an internet connection.
Can confirm. Also affects iOS.
Steps to reproduce:
If you haven’t changed the language to Chinese (regardless Traditional or Simplified), switch to one of it from Options > Language.
Return to Title screen, which it uses JSON UI (the old UI)
Observe the Title screen, specifically the font used on it (like from “JSON UI title screen.jpg”)
Click “遊戲” / “游戏” (Play), which it uses OreUI (the new UI)
Observe the Play screen, specifically the font used on it
Expected result: The font from steps 4-5 would be the same as that from steps 2-3.
Observed result: The font from steps 4-5 is different to that from steps 2-3.
