I updated the game and now when I go to open the game it’ll show me the mojang red screen, stays like that for maybe 10 seconds then the screen goes gray and then it takes me back to the Xbox Home Screen.

We're actually already tracking this issue at [MCPE-229336] Xbox: Game crashes on launch or shortly after launch after 1.21.113 update - Jira Service Management, so I will resolve and link this ticket as a duplicate.
