Load a world and play for a couple of minutes and Minecraft.Windows.exe process’s memory footprint grows to consume all available memory. Gameplay stutters constantly and becomes unplayable. Exit the game and the Minecraft.Windows.exe process doesn’t terminate for a couple of minutes after slowly releasing the memory.

I was able to stop the leak by disabling “Improve Input Response” from the Settings/Video menu and restart the game.
