(Fixed)
After updating to version 1.21.120, when I launch the game it the red screen with mojang on it, goes white in fullscreen then closes.

This happens every time I open the game whether it is through xbox app, microsoft store, minecraft launcher, or even searching for the app on windows start menu and clicking open. I have also reinstalled the game twice.

Do you by chance have "Improved Input Response" option enabled?
