loading screen updated to 1.21.121 before loading game. upon going in to my world, the game pauses randomly while doing everyday tasks, harvesting wheat, feeding animals, digging grass, attacking mobs etc. Quitting the launcher and Restarting the game did not fix issue, it continues to pause itself randomly without touching the ESC button.

is it because your cursor is leaving the window? that appears to be common after the latest update and when you click while its outside it will unfocus the game and the game will pause. its genuinely insane how they didnt find this if they actually playtested it
