When in fullscreen with a multi-monitor setup right clicking randomly clicks on the desktop at the edge of you other screens and at the same time the game goes into the pause menu. Switching to windowed mode also has the same effect but now you can click on the top window bar, cause the taskbar to unhide and click as well as the previously mentioned clicking on the edge of the other screens. The only solution I have right now is to turn off my other monitors while playing minecraft and only play in fullscreen mode.
