First time this happened i was on version 1.21.123 cleaning a large area i had turned into moss, at the same time, i was turning all this moss, seeds and azalea into bonemeal through a hopper on top of a composter when i suddenly see a missing chunk, second time was on version 1.21.124, i was doing the exact same thing when another chunk disappeared, both times this only affected the bedrock since i had already gotten rid of the dirt on top
