It wasn't an option but this affects version 1.21.124 of Minecraft on nintendo switch, both on the original nintendo switch and the nintendo switch 2.
Every time when the game is opened the text to speach for UI and Chat turns itself on with no fix it seems bedside to manually turn it off every time
