Zombie nautilus jockeys are difficult to find because a large proportion of the zombie nautili despawn immediately after they spawn. The despawn component for zombie nautilus matches fish, with an instant despawn radius of 40 blocks. However, they are spawned by drowned, who spawn at a radius of 24-44 blocks on simulation distance 4 and 24-128 blocks on higher simulation distances. The following chart shows the percentage of the drowned spawn area where zombie nautilus mounts spawned by those drowned immediately despawn.

I have been hunting drowned for hours, killed enough trident wielders to get 10+ tridents, and not a single one was on a nautilus.

I tried it on new worlds on creative mode and was able to find jockeys, but in my survival world from previous version none spawned, despite coming across so many trident drowned, to the point I got like 15 tridents in my inventory

only idea I have is maybe the jockey chance is less than 50% to balance out the overall spawn rate with java, where trident drowns are much rarer
Where are you getting the expectation that 50% of trident-wielding drowned will spawn riding a zombie nautilus? I do not see that stated in either the Java changelog or the Bedrock changelog for Mounts of Mayhem.
When I calculate from the Bedrock spawn rules and behavior files, zombie-nautilus-riders should be about 2% of drowned overall, and slightly less than 12% of trident-wielding drowned.
When I tried to compare the Java vs. Bedrock experience in-game, I found that drowned hardly spawn at all in Java outside of structures, so I couldn’t make a comparison. I see about 1 drowned spawn every 10 minutes as I swim around an ocean with the time locked at midnight.
Same! Did testing in creative too; couldn’t get one to spawn!
