The health/hunger bar indicators have been pushed upwards off the screen and are no longer visible, no matter what accessibility options I change in the menu. This renders the game unplayable in survival mode as I no longer know how much health or hunger I am missing.

Yes, this issue still occurs with the newest update. First image below is with the classic UI profile, second image is with the pocket UI profile.
Change your UI profile for pocket to classic from video in settings
