All global settings reset to their defaults upon launch. This occurs randomly and not every time. It is guaranteed to reset after an update.
This issue occurs in more versions than 26.3, and has been an issue since 1.21.130.
How to reproduce:
Open minecraft
Change a setting to something that is not default
Close the game
Repeat until the settings reset
Observed result:
All settings in Video, Keyboard & Mouse, Creator, and Accessibility are reset (including graphics mode, graphics preferences, keybinds, creator logs, etc)
Expected Result:
All settings should NEVER change by themselves, regardless of updates.
