Actual results:
Both adult and baby rabbit models have not changed.
How to Reproduce:

For me, the new rabbit model only shows when I disabled all of my local resource pack. Whenever I enabled just 1 resource pack, it shows the old rabbit model
For me and people I know, the rabbit texture doesn’t even work, I have had to make a resource pack to actually have the new model and textures in the game.
Can confirm. This happened to me after I used Global Resource Packs made before 26.10. I also noticed this seems to affect Copper Golem textures (they’re invisible now) and Creeper textures (they look Charged)
Hi! I met the similar situation! See MCPE-237858 (might be a duplicate of your post)

This issue also effects any add ons with a resource pack of the same property's, I have had to fix the rabbit myself with a texture pack to get it to work on the realm I play on. I should not still have to fix this issue months after tiny take over, especially since it is one of the bigger updates for this drop, please fix this issue.
