As the title says, when you dock the Switch 2 to a TV it remains in its handheld profile. Which has a much softer 1080p resolution and seemingly much more aggressive aliasing. Which makes it look atrocious on the big screen. This does not occur when the system goes from docked to undocked, where it correctly changes resolution.

The HDMI cable I use is the one that comes included with the console. It does support high resolution and high framerate outputs.
My TV supports 120hz, but Minecraft never seems to engage the Switch 2’s 120hz mode properly as I can see by going to “Dock Output Information” in display settings (which shows the max possible resolution being 4K and the max possible refresh rate being 60hz (which is always shown if the game doesn’t support 120hz). If Minecraft was set to be able to output in the 120hz mode, it would show the dock output information that is shown whenever I run games like Cyberpunk 2077 in performance mode (a maximum possible resolution of 1440p with a max possible refresh rate if 120hz).
